There have been lots of cauliflower crust pizza recipes popping up all over the place, and I have been wanting to try one after the success of the cauliflower rice and creamy, cheesy cauliflower mash. But, I have noticed that most of them have a ton of cheese, usually a cup.

In my opinion, all though this probably tastes great, it defeats the purpose to some extent because you add so much fat and calories from the cheese. After experimenting a bit, I found I was able to get a pretty crispy crust using just 1/4 cup cheese and a whole egg.

The following ingredients are what I used to make a homemade cauliflower crust for my pizza. You can then add your favorite toppings and sauce.

  • Cauliflower Florets: I used about 3 cups of cauliflower florets, which is about an entire head of cauliflower.
  • Garlic: A fresh garlic clove will have a lot more flavor than garlic powder, so I suggest using it if you can.
  • Egg: This binds all the ingredients together. It's a very important ingredient.
  • Cheese: Part-skim mozzarella cheese has fewer fat and calories, so use it. If you aren't concerned about the amount of those, you can use full-fat cheese. I mixed it with some shredded parmesan cheese.
  • Spices: Italian spices are the best ones to use in any crust you make. I used oregano, parsley, basil, salt, and pepper.
